The menu
Grouped by what you feel like eating, with raw and cooked marked on every family.
Prices and what is available on the day are confirmed in the restaurant. We would rather leave them off this page than publish a number that turns out to be wrong.

- Raw Contains uncooked fish or seafood.
- Cooked Nothing on the plate was served raw.
- Either Comes in both versions. Ask which one you are getting.
Every family carries a word and a symbol, never a colour on its own.
The raw side
Delicate on purpose. Very little happens to the fish, which is exactly the point.

Nigiri
RawPressed rice with a slice of fish over it. Salmon and tuna are the usual starting points.
Sashimi
RawFish alone, sliced. Best eaten soon after it reaches the table, which is why it is a poor choice for a long trip home.
Raw filled rolls
RawMaki built around raw fish, often with avocado or cucumber alongside.
Rice bowls
EitherSushi rice with toppings scattered over it. Comes raw or cooked depending on what you choose.
The cooked side
Roughly half of any sushi menu was never raw. It is the louder, bolder half.

Cooked rolls
CookedPoached shrimp, crab stick, grilled eel, tempura. Warm rice, cool avocado, something crunchy.
Tempura
CookedFried in a light batter. Eat it while it is still crisp, which it will not be after a drive home.
Grilled and glazed
CookedCaramelised sauces over fish, chicken or aubergine.
Soups and noodles
CookedWarm bowls for the days when raw is not what you came for. Note that classic broths are built on fish stock.
Vegetables and tofu
A family of its own, not a line at the bottom of the page.

Vegetable rolls
CookedAvocado, cucumber, pickled radish, sweet potato. Simple, and only as good as the rice.
Inari
CookedSushi rice in a pocket of sweet fried tofu. Filling, and constantly overlooked.
Vegetable tempura
CookedSweet potato, green bean, pumpkin.
Sides
CookedEdamame, seaweed salad, pickles. What turns three items into a meal.
Fish hides in places a menu rarely mentions: dashi stock in soups and simmered dishes, bonito flakes on warm plates, fish extract in some sauces, and surimi crab stick. If you are vegetarian, ask about those four by name.
About this menu
Why are there no prices on this page?
Because we do not have a price list we can stand behind yet. Publishing a guessed number would be worse than publishing nothing, so the prices are the ones on the menu in the restaurant.
Is everything here available every day?
No. What is on the counter changes with what the kitchen has. Treat this page as the shape of the menu rather than as today's list.

Something you need to check first?
Ask before you come rather than at the table. It is a better use of everyone's evening.
